The Great Polish Exodus—But the Soul of Poland is Staying

According to recent data from the Office for National Statistics (ONS) and the Polish Economic Institute, a significant shift is happening in Britain.1 Between June 2024 and June 2025, over 25,000 Polish citizens left the UK, while only 7,000 arrived.2 Driven by rising living costs, a booming Polish economy, and a post-Brexit change in priorities, many of my compatriots are heading home.3


But while the numbers may be thinning, the culture, the flavour, and the heart of Poland are firmly rooted here in the UK.

When the Prince and Princess of Wales visited Poland, I was the chef chosen to introduce them to the soul of my country. They didn't just eat food; they experienced a story of heritage. My "Modern Polish" offering is an evolution of that very menu.

  • The Royal Smalec: A sophisticated whipped pork spread with Dingley Dell pork, served with my signature charcoal sourdough and sharp, home-made pickles.

  • The Hand-Folded Pierogi: Forget what you know about "dumplings." These are delicate, stuffed with slow-cooked meats or artisanal cheeses, finished with burnt onion sauce and Fenland pickled carrots.

  • The Baltic Herring: Brined in-house and served with a contemporary twist of beetroot puree and compressed apple.

  • The "Ptys" Puff: A light-as-air pastry filled with Chantilly cream and fresh summer fruits—the perfect end to a Royal feast.



Poland is Closer Than You Think

As many return to Poland for "family and home," I am bringing that sense of home to you. Whether it’s a City of London reception or a garden party in the countryside, I bring the "Olympic-standard" precision of my career (from London 2012 to Noma) and infuse it with the recipes of my childhood.
