I. The Forest & The Sea

 

Wild Mushroom Consommé | Hand-Dived Scallop | Pickled Pine

  • The Dish: A crystal-clear, deep amber broth of foraged porcini and forest floor aromatics, poured table-side over a butter-basted Orkney scallop.

  • The Detail: Accented with tiny spruce tips pickled in the previous season and a delicate "soil" of dehydrated rye and hazelnut.

 

II. The Heartland

Salt-Aged Venison | Pierogi of Braised Wild Boar | Fermented Red Cabbage

  • The Dish: Loin of Highland Venison, roasted over charcoal and rested in hay.

  • The Detail: Served with a single, translucent Pierogi filled with rich, 12-hour braised wild boar. Balanced with the sharp complexity of 6-month fermented red cabbage and a rich jus infused with dark chocolate and juniper.

 

III. The Orchard

Caramelised Honey Cake | Soured Cream Ice | Bee Pollen

  • The Dish: A sophisticated deconstruction of the traditional Polish Miodownik.

  • The Detail: Layers of burnt honey sponge and salted caramel, paired with a sharp, high-fat soured cream ice cream to cut through the richness. Finished with textures of honeycomb and fresh Cambridgeshire bee pollen.
